Tofu Quiche

Ingredients:

1 tbs olive oil
2 cloves garlic, minced
1 medium onion, finely chopped
100g red capsicum, minced
250g finely chopped spinach
800g firm tofu, drained and pressed to remove moisture, mash till smooth
3-4 spring onions, finely chopped
3 egg whites, light beaten with half tsp salt
60g parmesan cheese, grated
1 tbs parsley, finely chopped
salt & pepper

Saute garlic, onion and capsicum with oil till soft.
Add spinach, saute for a while.
Fold in tofu.
Turn off heat, add in the rest and combine well.
Place in a quiche pan.
Bake in a preheated oven of 180 deg C for 20 mins or until top is firm and edges are browned.

Serves 4 people.

Beef Stew (Med's recipe)

Ingredients;

1 tablespoon of chopped Garlic
1 stalk of Carrot, diced
1 Onion (white type), diced
1 large potato, diced
500gm beef cubes
1 beef stock cube
Oil (olive oil will be the healthier choice)

Stirfry garlic & onion with oil.
Add in diced carrot & potato
Add in beef cubes and stirfry for abt 5 minutes.
Add water and cook till it's boiling
Add beef cube.
Lower the fire and cook for another 2 hours.

Serves 2-3 people.

Smokey tomato soup‏

Ingredients:
Sliced tomatoes
Smoked bacon, cut into bits
1 tablespoon of garlic, chopped
1 stalk of celery, diced
1 stalk of carrot, diced
1 onion (white type), diced
2-4 cups of chicken stock
1 stalk of fresh parsley leaves
Cream (Optional)
Bread (of your choice)
Cheddar cheese

Roast sliced tomatoes.
Fry smoked bacon.
Using the oil for frying bacon, fry garlic, diced celery, carrots, onions, till soft.
Add dashes of pepper.
Placed the cooked vegetables into food processor, add a cup of chicken stock, some pepper, some fresh parsley leaves, grind it.
Place the mixture back to pot and add in more chicken stock, put in fire roasted tomatoes, (cream is optional). Simmer over slow fire and season with pepper.

Place smoked cheddar cheese onto bread, then place bacon on top of cheese. Toast it in the oven toaster.
Serve the soup toasted cheesy & Bacon bread.

Chinese Stew Pork (噜肉)

Ingredients:

500gm Pork belly
500gm Cubed pork
Shitake mushrooms (abt 10, remove the stems)
1 whole garlic glove
1 chunck of rock sugar
1 teaspoon of sesame oil
5-spices powder,
2 tablespoon of dark soy sauce
Sea cucumber (optional)

Put Pork belly & pork cubes in pot with water covering the meat.
Add mushrooms, whole garlic glove, rock sugar, sesame oil, dashes of 5 spices powder, dark soy sauce.
Cook for 2 hours (over medium fire first then simmer over low fire).
When about to serve, add in sea cucumber (optional.
Note: do not cook the sea cucumber for too long.

Serves 2-3 people.

Juicy Char Siew (叉烧)

Ingredients:
500gm Pork belly
500gsm Lean meat (optional)
Hoi sin sauce (enough to cover the meat)
2 tablespoon honey
5-spices powder

Season pork belly and some lean meat with hoi sin sauce, honey and 5-spices powder for 1 hour. (just make sure that the sauces cover the meat)
Place meat on baking pan and bake it in oven at 220 degree celsius.
Roast for about 45 mins. Toss once after 20 minutes.
Slice and get ready to serve.

Serves 2-3 people.

This blog is dedicated to people who loves cooking. I love cooking but I'm not a good cook. In fact, I'm a lazy one. I don't like complicated steps and ingredients. I prefer simple, quick, easy to follow/remember steps that makes the process of cooking enjoyable. And most important of all, add some spices of LOVE and your dish is complete!
